In an effort to keep up with regularly cooking healthy meals at home, we will start posting our weekly menu every Monday!
This year my word is Intentional (more on this word and why I chose it later) and this is definitely an area in our lives that I have to really be intentional with otherwise we will end up in Chick-fil-A’s drive thru line WAY too often.
We eat a lot of the same favorites over and over, because yum, but I’m also excited to use this as a way to try new things and then revisit them by posting our favorite recipes!
Let’s get to it!
Monday: Instant Pot Chicken Thighs with roasted carrots and red potato oven fries.
Tuesday: Bunless burgers with sauteed onions, bacon and toppings with frozen hash browns and roasted broccoli
Wednesday: Chicken Adobo with rice and stir fry veggies cooked in coconut aminos
Thursday: Chili (in the Instant Pot!) and GF cornbread
Friday: Whole chicken in the Instant Pot, oven fries and roasted broccoli
Saturday: OUT! Headed to see our cousins in Pensacola and will be eating out!
Sunday: Fed and Fit’s Slow Cooker Barbacoa with Siete tortillas and all the fixings!
One thing that has made our lives infinitely easier is our Instant Pot! Seriously, if you don’t have one, go right now and order it! You will not regret it!
