Something new!
We are going to start doing a little snippet/review on how we liked the new recipes we try each week!
Last week the new recipes were Paleo Mongolian Beef, Simple Not Chili Soup and Paleo Thai Red Curry Soup.
What did we think?
Paleo Mongolian Beef: Freaking YUM! It was a little time consuming having to do the batches of meat in small portions to make sure that they turned out crispy, but man was it worth it!! This is a meal we won’t make weekly and probably not ever during the week, but this is a great one for a special occasion. (hint, hint: Valentine’s Day!)
Simple Not Chili Soup: It was good, but we definitely like a thicker soup, so I wouldn’t add so much chicken broth. We aren’t big “soup people,” so while this was good, it’s not something we are dying to make this week.
Paleo Thai Red Curry Soup: We actually ended up cooking this and the Paleo Mongolian Beef on the same night. Partly because I know Jared isn’t a big curry fan and also because we had family over and I knew there wouldn’t be enough beef to go around. While the soup was good, there was no spice at all (I did about 2 tbsp of curry paste vs the 3 so that Cooper would eat it) and it was pretty thin. I would try to make it a thicker soup and also add more paste to it for some spice. Even Jared liked it and ate it the next day for lunch!
Okay, now let’s get to this week’s meal plan!
Monday: IP Chicken Yum Yum over white rice and roasted broccoli
Tuesday: IP Chili with GF cornbread
Wednesday: Stuffed sweet potatoes with the chicken from this recipe with that amazing sauce! (Side note: I would eat the recipe as it comes ALL DAY LONG but Jared isn’t a huge fan of avocados!)
Thursday: Meat sauce over GF noodles with spinach salad
Friday: Chicken Taco Casserole
Saturday: Grilled chicken sausages with roasted carrots and red potatos
Sunday: Orange chicken over white rice and stir fry veggies (broccoli, carrots and onions)

Hey, where’s the freaking video?!
Our bad! This weekend was slammed with lots of family activities and we just couldn’t get to it. BUT we promise that we do have a plan in place so that it doesn’t happen again! We do want your input though! We know that everyone has enjoyed the meal prep videos with the Instant Pot, but do you have anything you’d like us to do a video on?
