Oh man.
I haven’t been consistent with these plans, but I have gotten some feedback saying how helpful they are, so I am trying my best to bring them back!!
This week, I have spent some time doing quite a bit of self-development (is that a thing?) and working on building myself up and figuring out why I think they way I do sometimes.
In today’s world, it is all too easy to get overwhelmed, get stuck in the comparison trap and give up before you ever even get yourself a fair shot!
I spent some time reading (really just doing Audible, for real, that technology is AMAZING!) self-help book by Jen Sincero and so much of what she said hit home.
Here’s the blog post I did reviewing “You Are A Badass” and some of my favorite parts!
Also, I took some time to spend with a friend that is so positive and every time I leave, I feel so uplifted, validated and optimistic. This is one thing that the book did touch on. Get rid of the negative Nancy’s and find friends that are positive!! I didn’t have to find her, luckily she was already a friend, but I do look forward to spending more time with her. She’s such an awesome girl! (Shout out to you, Sarah! ?)
Now to this week’s Menu Plan Monday!
Part of why I haven’t been consistent is because I am in a meal planning rut! I love the stuff we fix over and over, but it does tend to get boring!
So this week, we are trying some new things but also bringing back some favs we haven’t done in a while!
Monday: IP Chicken Drumsticks and then crisped up in the oven with BBQ sauce with baked potato and roasted cauliflower!
Tuesday: Slow Cooker Carnitas loaded nachos with ALL the toppings! (Friends over, YAY!)
Wednesday: Burgers! With bacon, sautéed onions, lettuce and more, with roasted sweet potatoes.
Thursday: Chicken Parm over GF noodles with sauce
Friday: IP Barbacoa over rice and roasted broccoli.
IP = Instant Pot recipe!
