I can’t believe this week is already here.
Morgan is turning ONE on Saturday!
How did this year go by already?!
I mean I know time goes by fast, but with the 2nd child, it goes by so much faster than it did with the 1st!
I plan on writing a sappy post (because I want to, okay!?) about her birthday and how we are really kicking it back to the basics with her party. I really have tried hard to be present with her, knowing that our plan is that she is our last baby. So her birthday party will be more focused on celebrating her than the stress of the details going into it.
Because of trying to get everything in order for that, I am keeping the meals simple this week!
My Mom will be in town on Wednesday and she graciously has agreed to help me out with some projects around the house! (YAY!) So I didn’t want to have complicated meals when I will be trying to accomplish so many other things.
Besides, these meals below are KEY for us during the Summer.
No one wants to be standing in a hot kitchen forever when it’s so nice outside, so these meals are quick but still delicious!

Menu Plan Monday:
Monday: Burgers (again, I know….) Seriously, this is the easiest meal and so freaking yummy. We top ours with lettuce, onion/peppers, mayo, ketchup, avocado, tomato and bacon! Serving this with roasted sweet potato cubes and asparagus.
Tuesday: Tacos (salads). Because it’s Tuesday, duh! Going to do chicken this week, instead of beef. Will be using Primal Palate’s recipe for taco seasoning. The best!
Wednesday: Chicken wings and roasted carrots and brussel sprouts
Thursday: Pulled pork with home fries and green beans
Friday: Balsamic chicken and strawberries over spinach salad. This is one of my favorite easy meals for warm weather months!
